Yes the hygiene score is maybe 3 or 4 - That probably means the premises were clean on the day of the visit. However, 'faith in management' is important. If the management don't emphasise the importance of correct procedures then the human factor comes into this. A perfectly clean kitchen is one thing, but staff members, who don't appreciate correct procedures, and thus behave incorrectly, are just as much a danger.</span></div><div id="yui_3_16_0_1_1417988094278_3700" dir="ltr" class="" style=""><span id="yui_3_16_0_1_1417988094278_8501" class="" style="">I well remember going into a toilet, which was situated below a cafe, to wash my hands before going into the cafe. Out of one of the 'sit downs' came a man wearing an apron. He went straight out without going anywhere near a sink. He failed in two areas: 1. He should not have taken his apron with him to the toilet and 2, obviously, he made no attempt to wash his hands. This is where'little confidence in the management' comes in. It is very relevant to the hygiene scores and should not be dismissed.</span></div><div id="yui_3_16_0_1_1417988094278_3700" dir="ltr" class="" style=""><span id="yui_3_16_0_1_1417988094278_12273" class="" style="">Not all cases of food poisoning are immediately evident.
