This may be a stupid question, but have you upgraded exim recently? I
vaguely remember the bog standard exim.conf using example.com throughout
its config. 

I dont know this for sure as i dont have exim installed on my debian box
any more but it rings a bell. You may wish to check it hasnt been hosed
by and apt-get upgrade or something.
