[Hudlug] Debian repositories

From my DVD installation of Sarge the only sources that are installed 
are the disk and Security.  Should I stick with that or add other 
repositories?  Does adding other repositories make it the equivalent of 
'unstable'?

I did try googling, but didn't understand what I was being offered, and 
didn't want to set unsuitable sources.
