I've been a certified developer, system and network professional for both - it isn't.  

The Mach Kernel are way better written that the old Mac OS and Objective C is way better thought out than SmallTalk.  By time Copland kicked off in the early-mid nineties the Macintosh Toolbox (the kernel with large chunks of code in ROM) was very long-in-the-tooth and several dozens of layers of functionality overlaid on the original System 1 OS.

Best thing that happened was Jobs going and setting up NeXT, nicking some smart cookies from Apple and then spending a vast part of his $100 million payoff recruiting the smartest people he could find (they famously had Yale graduates as receptionists).  NeXT wasn't burdened by the baggage of Apple and took a clean look at OS, language and UI design - this is the legacy of Mac OS today.

When you used to start to want to design on Mac OS pre-X days you have to read the infamous Inside Macintosh - multiple huge telephone directory size volumes.  Now you can understand the architecture in a couple of small PDF files.
