For me, the persuasive bit of Linux is that you can do everything you
can do on Windows, but most of the time free of charge. So a machine
with Open Office, The Gimp, some music software, some video software,
chat, etc. so we can demonstrate the basics of a home PC and perhaps
and office PC, would be persuasive to me.

If we stray too far (into weird interfaces) it just makes Linux look
geeky.

We could run a challenge .. everyone has things they want their
computers to do, they could challenge us to come up with Linux
software to achieve it. So person a) might have heard they can get
VOIP software to get free software to their family in Australia, what
Linux s/w do we recommend (distro + app), person b) might want to
compose music, c) do general office work, and d) create 3d graphics.
We could even organise ourselves to quote for hardware and even build
and deliver the things if people want to go that far. It's my forte to
organise systems for fair allocation of work and even remuneration if
we want to take it to an extreme.

Anyway, most challenges would be easy and we'd reply on the day.
Perhaps we'd keep a log of all requests.

Some challenges we'd go back to the person by email.

The most popular challenges with their answers, and some of the more
interesting ones, we could post on our website.
