Actually thinking about this, this will ask you a lot of questions.

You may well be better off just purging X and reinstalling to get the
real new user experience.

Some of the sarge install should be better once it's released by the
way.  Did you use debian-installer?  It's a beta installer at the moment
but it's had lots of work done to it to improve what it offers over what
boot-floppies does.
