So Neil and Dickon are right that --get-selections is best but if you
can't get that to tell you about the underlying Ubuntu (I think it; I
think you'll be fine) then in answer to your subject line you want to
grub around in (and possibly backup) /var/lib/dpkg in particular
/var/lib/dpkg/status
