Sendmail is the most popular, the largest and most complex. (I'm
deliberately missing out MMDF - avoid that like the plague)

I've heard that Exim is quite nice once you've installed it properly.
Postfix seems to be the simplest to configure.

UW-IMAP is probably the most common, and comes with POP3 as well.
