Perhaps have a loop that reads in the records of your data that you are
merging from and a loop that reads in the fields of your record and writes
out s/field/replacement/ for each line.

TeX (pronounced tech), is a text based processing language, so changing
the text with sed will be no problem.

I played with LaTex a long while back, while I was bored at college. Not
much experience bar knowing what the format is called.
