I would suggest Exim4 as your MTA.  It was written to handle all e-mail
coming into Cambridge Uni, and believe me they have a complex set up with
all the different colleges all having there having there own systems.  The 
thinking is that if exim4 can route mail there it can route it anywhere.

You can get courier or a number of the other systems to act as you
imap (or pop3) servers.  They integrate well together.  I have 
successful got an Exim4/Courier system working with IMAP access to
Outlook, Evolution and SquirrelMail clients

I gave a talk at the Moot on using exim last month - you should have
been there.  But you can see the presentation on the website.
