Not quite sure why a different laptop would be any easier...also not quite
sure what you wouldn't be able to do with a default chromebook that you
would with Linux ? (I have one, and use mainly when on holidays), but there
are certainly some things that may apply.
You can even enable Linux shell off the bat,
settings->advanced->developers->linux development environment->on. It's not
quite the same as a full window based linux environment though for sure.
If you do go the Gallium route, there are some instructions at
https://wiki.galliumos.org/Installing (note the "Important" line on that
page).
