as far as i know you dont configure it at all for use with evolution,
just have it installed.

evolution will run the spam assassin programs as and when it needs them,
you just turn on the option inside evolution to do spam filtering, it
does the rest automatically, like running sa-learn for you when you mark
messages as spam or not.
