Well, my experience is all in the academic area, but Cardiff Uni has 
tonnes of Linux servers.  Nearly all Red Hat, I think.  Mostly virtual, 
of course.  On the other hand, UWIC is almost 100% Microsoft.

Don't know about anywhere else.
