I am sure there must be a very simple way to create a
single NIC gateway under linux - one nic, 2 ips
(192.168.0.1 and the cable modem DHCP address), but i
can't work out how.

Your DHCP will bring up and interface eth0 once this is up you can manually
add
another ip address to the nic with the command:-

ifconfig eth0:1 (new address)(netmask (optional)) up

This has the effect of making the card appear as 2 ip's

Dont forget to add any routing you require as eth0
