Actually you can!

Through the trickery of VNC support in the CentOS (and RHEL) installer

You can boot the installation with VNC arguments and run the VNC
viewer on a machine recording the install process

The boot parameters would be

linux  vnc vncconnect=<IP ADDDRESS> headless ip=dhcp ksdevice=eth0
method=http://mirror.centos.org/centos/4/os/i386/ lang=en_GB keymap=uk
