David has talked about port forwarding VNC but you can
also do X connection forwarding (ssh -X on command
line ssh, not sure about putty), you'll need an X
server running locally (as putty==windows you might
want to look at cygwin and their X server) and need to
set up the remote machine to allow remote X
connections but then you can start gui programs from
the ssh cli and have them display on your local
machine.

Very usefull for managing a server when you cant be
bothered to walk to the server room :-)
