The only thing I have done different to the above is to use dyndns to
automatically maintain the correct IP for my public IP.

So for wellsted.org.uk the MX record points to wellsted.dyndns.org. It
is perfectly permissible to have an MX record pointing to a name outside
of the domain.

I use ddclient to update the dyndns servers with the correct IP address
(OK, it very rarely changes, my record was 2 - 3 years without a change,
it only changed last time I replaced my firewall).
