If you're planning on using ubuntu server and really want to get to grips with it I can recommend the Official Ubuntu Server Book :)

It covers a nice mixture of Hardy server and Jaunty Server(iirc).  It
goes into a good level of understanding and is pretty much plain English
as to why you need the elements in place too (for things like firewall,
backups etc).  You might also want to take a look that the online server
guide but it less informative and more do this to make this work with no
explanation as to why.
