How about some messaging things? I know emacs has support for stuff
like Jabber, but I never got it working
pebrot - msn
irssi/bitchX/ircII/... - IRC

Then we have some of the image tools if you have framebuffer.
Imagemagick is always useful, and fbida to get a nice fb image viewer
(fbi).
Also, as Kris pointed out, the ability to play videos might be nice,
depending on how cut back you wanted to make it, so mplayer?

Also. GNUBoy has a framebuffer binary. Definite must have!
