Try using top from a terminal instead of gnome-system-monitor. You can 
use > or < to change the sort order. The VIRT and RES columns will show 
you any processes that are using excessive amounts of memory.

That said the OOM log output below doesn't show any process that looks 
massive. I'd expect that any runaway using over a gig in memory.

That sort of thing could happen. The OOM killer will be the thing that 
makes the system recover.

Possibly but if a process finishes the memory should be freed and all 
will recover.

Another possibility is that you have a filesystem mounted that is 
memory/swap backed rather than disk backed. That sort of thing could be 
/tmp, /run /var/run or something else. If one of your processes is 
leaving files around in one of those areas then that may gradually fill 
up swap.

You should be able to find any memory backed devices by looking for 
tmpfs nodes in the output of the mount command.
On my Ubuntu system I've got

I'm not convinced because I doubt that tmpfs would let you use all the 
memory but maybe it does.

That log shows the OOM (out of memory) killer coming along to rescue 
your system. It chooses a likely "naughty" process to kill. That can 
vary depending on whos active etc.
