[Gllug] email addresses for virtual hosts

I've got a single box with several domains on it (all the same IP
address)

I want to have emails for each domain e.g. if I have domains foo.com and
bar.org I want to be able to have separate emails addresses paul at foo.com
and paul at bar.org (i.e. they go to different mailboxes and could be
different people).

Firstly, is this possible or does the smtp protocol just go by IP
address (like ftp does)?

Secondly, if it is possible, is it just the MTA I need to configure for
this (I'm using postfix)?
I've set up DNS MX records for each domain - not sure if this is
necessary or relevant.

At the moment the main domain email is working OK but for example
paul at foo.com and paul at bar.org are both using /var/spool/paul - do I need
to create mail spools like /var/spool/foo.com/paul and
/var/spool/bar.org/paul or something then amend my /etc/postfix/main.cf?
