Well Exim is only an mta, not a mail-store, so you need a pop or imap 
server. For your simple set-up UW-imap would be plenty.  In fact it would 
simplify things as you can run UW-imap out of xinetd and that lets you 
use xinetd's security rules to ensure that the service is not visible on 
your ppp connection, an extra layer of security behind your firewall and 
one you will need since you are going to run all these services on an 
internet-facing box.

Exim is a good mta.  I'm coming to prefer it over Postfix, being closer 
to the metal and more configurable though it lacks Postfix's nice 
queueing algorithm.  You should be able to configure it for home use with 
minimal effort.
