Hmmm,
My boot cdrom idea was going well, but.
I have a bbc credit card cdrom but this doesn't do ext3 :-(
Back to the drawing board...

No, not that I'm aware of. The RH installer is smart enough to not
duplicate labels. If the system already has the labels present, then
it'll append a number (e.g., /boot1). However, there's nothing it can
do if you create the disks separately, and then put them both in the
same machine.
Your only option at this point is to boot to single user and then
either change /etc/fstab to mount using device name or uuid, or to
relabel your second drive.
