I recently got myself a MuVo too and have seen exactly this behaviour.
I noticed that if I type 'dmesg' there are all sorts of horrific
scsi error messages getting spewed to the console. After a little
experimentation I noticed that it seemed particularly bad when I
had several Nautilus windows open and was doing multiple concurrent
copies. So I've tried mounting the device with the 'sync' option
and all the errors disappeared. The downside is that copy files
to it is now like wading through treacle :-( Next up I'm going to 
try just the 'dirsync' option which doesn't slow things down as much
since it only synchronizes directory operations. Personally I blame
dodgy firmware since USB mass storage in general seems pretty good
these days. My kernel is 2.4.21-4.EL BTW.
