The typical setup for Netware 3.12 was a small DOS partition, and the
rest of the disk dedicated to the Netware partition. The Netware
partition could be optionally sub-divided further into "volumes". The
machine would boot from the DOS partition, which would run server.exe,
which started up the Netware OS. Dos was used effectively only as a boot
loader.
The fact you can get to the DOS partition is good, as the disk can't be
completely hosed. The downside is there's not much around that'll read a
Netware partition directly - most netware compatible software is based
around understanding the Novell network protocols, not the on-disk
format. You could try:-

Your other option is to find a Netware server and plug the disk into it
- ISTR that you could mount volumes from other disk on your server
fairly simply, but it's been years since I've looked at Netware in any
serious way.
