I mean it seems to have difficulty in ascertaining the real IP address
of the connecting system.
The email header is one example, the squid log entries below are another
example...

None of these requests came directly from the gateway. In my old setup -
where squid was on a box used for all sorts of other things, this
wouldn't have beenr ecorded in this way, but I suspect I also put an
entry in the kernel routin table explicitly nominating a gateway for
that network (ie 192.168.63.64, the IP address of the wireless nic on
the gateway) - is that the reason?
The kernel routing table on the mail/squid server is now very simple:
