Postfix can redirect and rewrite email headers. Read the manuals.

I have configured Postfix to work with Spamassassin and clamAV (for virus
scanning) using Amavisd-new to glue it all together. You can also use
Procmail, Bash or Perl Scripting for your content filtering controls.

The content filtering options in Postfix are very powerful so read the manual
carefully. The documentation is very comprehensive. 

The Postfix master.cf file allows creation of additional daemons/pipes. This
is how amavisd-new interfaces with postfix.

BTW. If you do get into content filtering don't be tempted to use anything
that directly accesses the queued mail. It is a sure way to lose stuff.
