Could also catch people in digest mode.

I usually use emacs for reading my mail, undigestify the digests with
undigestify-rmail-message - so that gives me the right headers (I
hope). Or I'd use mutt which lets me edit the headers before sending.

But if I reply manually via another client, I would copy the subject
and cut the text for quoting ... but probably not change the
headers. I'm not sure I would know how to do this with something
unflexible like outlook, eudora, etc - do these things give you access
to the headers.
