I think you've put your finger on the problem there.  For the system to be
able to boot up to an operational state on power up and without
intervention then the crypto key needs to be present on the box.  If it's
present on the box then you've just defeated the point of having
encryption.

You could perhaps have a system which booted without intervention (from an
unencrypted FS) and then you would ssh in to mount the encrypted data
partitions.
