If it's formatted in a FAT format, then use mlabel (you may need to
install mtools from the repositories), and replace sdax with the
correct device for the memory stick

$ mlabel -i /dev/sdax "::New Name"

If it's formatted in EXT format, then I believe "tune2fs" should work.
