I thought Ubuntu were quite candid about pulling from Debian Unstable? 
I'm sure when I first looked into it (6.06ish) they were advertising on 
those grounds.

And the server edition, to the best of my knowledge, is only different 
to the 'standard' in terms of the default installs. The repos are 
identical for 9.04 desktop and 9.04 server.

Finally LTS implies long(er)-term support, not a level of stability.
