Baobab does look useful.
However on your minimal system your could use a combination of:
df -h
du -h --max-depth 1
sort
Write a script to run du -h --max-depth 1 (or 2 or 3 or whatever) and
mail it to you every day.
You should be able to keep track of your disk usage without installing
Gnome and all its dependencies.
