RAID5 with just two disks is a bit pointless, it's mostly equivalent to
RAID1.  The only reason to do that would be if you want to expand it by
adding more disks without having to take one disk out of the old array,
build the new one degraded, copy over the data (using e.g. pvmove), and
then lastly add the old disk to the new array and let it resynchronise.
