What are you using on the server side, or is the desire to replace 
Outlook AND Exchange ?

How many users are you talking about ?

What FOSS software is already in use (Firefox/OpenOffice.org) ?

I think the potential answers to your question are framed/constrained by 
the answers to these questions.
