A good tool for looking at NFS activity is 'nfswatch'
http://nfswatch.sourceforge.net/


Also look at what the memory is doing - particularly NFS Unstable

watch  cat /proc/meminfo

Plus all the usual tools:   rpcinfo -p localhost
Ps aux and look for processes in D state
