Bah. Apache's rather lame default-name-based-vhost behaviour strikes
again.

Me, on my servers I explicitly put a vhost with the name of the
physical machine (rather than the name of any site) as the first
VirtualHost, and put up a page saying "Welcome to $server, if you see
this then either your browser doesn't emit Host: headers (WTF?) or
there's something wrong with the site you were trying to visit", etc...
