In the past I've used this fairly primitive method:

Run "locate mouse.png" - de-facto this lists all the mouse pointers
although I'm sure that a mouse pointer could have another name.  It
works with xfce and gnome anyway, and an equivalent once worked on a
windows machine in the dim and distant past.

Make some mouse icons of your own e.g. using gimp.

Then, depending on whether you are impatient or no, swap your image with
the current image or find the config file or pointer that specifies the
mouse icon and direct it towards your new creation.

Have fun!  My favourite for a while was a bright peacock feather matched
with an inkpot for the icon of a text I was writing and I wished that I
knew how to animate the feather with appropriate flourishes.  If you
could find out how to animate the pointer you could make the pointer
more prominent whilst you move it and finding it on a sunny day would be
easier.
