Forgot to mention: For analogue video (ie. VCR) the audio may be
captured by your existing sound card. So you have component/composite
video going to the USB/PCI video capture card, and component audio going
to the line-in of your sound card (most likely built-in to your
motherboard). You then use the Gnome/KDE audio mixer to ensure that
audio from the line-in socket is selected for recording.
You can break out SCART into component/composite using something like:

Alternatively you may find that your capture card already takes the
audio - especially if it is a USB device. In which case a new channel
may appear in the Gnome/KDE mixer.
