Shorewall. On the documentation page of the website
(http://www.shorewall.net/), go to "Getting Started (Introductory
Documents and Beginner HOWTOs)". There are HOWTOs there for a server
with one, two or three interfaces.
Shorewall uses Netfilter (ie, iptables) to build the firewall. We use
it on all of our servers, and it can build firewalls as simple or as
complex as you are ever likely to need. As an aside, the documentation
on the site and the support on the mailing list are both very good.
