Not sure if this is what you mean - but in Edit-> Account Settings -> 
Composition and Addressing there is a checkbox "Compose messages in HTML 
format"  If you uncheck that it certainly tends to compose in plain text.

This actually gives me a problem if I receive a message in HTML format 
and I want to forward it.  I haven't worked out how to keep it, other 
then by attaching the original to a text message.

Finally, just occasionally when I start an email from a link or 
something I end up with an HTML or RTF format and I don't know why, so 
anyone who can cast a bit of light on that: 'twould be appreciated.
