I've been using Audacity to record incoming audio from a turntable, chop 
it into tracks (manually) and save it as OGG and or MP3.  As it clearly 
has the ability to do all those things I'd suggest grabbing the source 
and having a poke around to see how it's done.  There are bound to be 
the bits in there you need - if you can find them amongst the mass of 
graphical stuff which you won't need.  The MP3 stuff is done with 
plugins which have to be installed BTW
