The manpages and info docs supplied with groff itself are pretty good.

I don't know of a "dummies guide" book, but you could try "Unix Text 
Processing", by Dale Dougherty and Tim O'Reilly.  It isn't really groff 
specific -- wriiten before groff made its original appearance -- it covers 
the use of a number of *nix tools, centred around AT&T troff, is quite 
comprehensive, and highly recommended.  (And, incidentally, the original book 
was itself typeset using troff).

Sadly, this book is out of print, but Larry Kollar et. al. have transcribed 
it, and maintain a downloadable online copy, in PDF, PostScript and groff 
source formats, at http://home.alltel.net/kollar/utp/

You could also subscribe to the groff mailing list -- see 
http://groff.ffii.org for details.  You will always find a number of people 
there, who are willing to answer questions, and offer advice.
