[Nottingham] Live system backup pitfalls / problems

For your opinions folks,

What pitfalls/problems are there to look out for when doing a tar backup 
of everything on a system while that system is live?

eg: If that machine's disk dies, untar using a rescue disk and then all 
is supposed to reboot sweet for the original system...
