Courier-imap works fine and I didn't notice any particular complexity 
with the config for it. A good default for Mandrake.

With ssh, you can access it with imaps from outside.

My only hint is that Maildirs are a much better idea than mbox, 
especially if you get lots of spam or even just the occasional 
Mega-MS-attachment.
