Enable SNMP from localhost only then use a tool like 

http://cacti.net/

to graph your SNMP stats, this way you have a nice
interface to map your stats from. 

Since all SNMP requests are via localhost these
shouldn't add any overhead, then if you want you can
then expand this out to all your servers that your
running.
