So from a bit o' surfin' and these two look to be good candidates for
self-hosted video conferencing on Linux:

OpenMeetings
http://openmeetings.apache.org/

and

BigBlueButton
http://bigbluebutton.org/


And they're both elaborate enough to need their own machine or VM or
container...
