I don't know of any courses, sorry. If you have any specific questions I'm
sure there are enough people on here that have done projects with AJAX in
them to answer your questions (myself included). There are also countless
blogs with intros and how-tos on them, many of which will have been tagged
by the AJAX-obsessed del.icio.us crowd:
