Yes, all possible.

In fact, I recommend having at least one 'rescue' linux kernel in the
menu, just in case you foul up a kernel upgrade - so you can still get
in and fix it.

Linux places no restriction on what it can accept as a root filesystem,
so just boot with root=<partition> and you could have 100 different
linuxes on there ;-)
