I think that the main difference between the server and desktop will be
that the desktop version has oOo and the gimp etc whereas the server has
apache, mysql, php, bind etc etc etc - so whichever you choose it's just
a case of adding the missing apps.
However I am happy having a slimmed down server with just the server
apps that I actually need rather than lots of extra stuff I'll never need.
