Most good music players will have the facility for you to do this. Juk, for 
example, has a fairly powerful and easy-to-use tag editing feature, and can 
keep your music in a single virtual catalogue irrespective of where the files 
are on your hard drives. The same goes for Amarok and Rythmbox.

You could also try some of the following applications that specialise in music 
management:
